Ingredients:
Yellow squash
Zucchini
Red onion
Cooked Pasta – bowtie or spiral
Cooked cubed or shredded chicken
Olive oil
Garlic to taste
Directions:
- Thinly slice the squash and zucchini
- Heat a small amount of olive oil
- Add veggies, chicken, and garlic to taste
- Sauté on medium-high heat for 5 minutes (or less – don’t let veggies get mushy)
- Toss with cooked pasta and a splash of Italian dressing if desired
- Enjoy!
This is also good as a cold dish the next day. Adding some sliced sun gold tomatoes gives it a nice flavor.
