Summer Squash with Chicken & Pasta

Pam came up with this recipe the other week to use up some of that (multiplying!) yellow squash and zucchini.  It is similar to the squash/zucchini ribbons recipe, but here we add chicken and pasta to make it more of a main dish.

Ingredients:
Yellow squash
Zucchini
Red onion
Cooked Pasta – bowtie or spiral
Cooked cubed or shredded chicken
Olive oil
Garlic to taste

Directions:
  • Thinly slice the squash and zucchini
  • Heat a small amount of olive oil
  • Add veggies, chicken, and garlic to taste
  • Sauté on medium-high heat for 5 minutes (or less – don’t let veggies get mushy)
  • Toss with cooked pasta and a splash of Italian dressing if desired
  • Enjoy!

This is also good as a cold dish the next day. Adding some sliced sun gold tomatoes gives it a nice flavor.
