Enjoyable as an appetizer or as an entrée!
· Combine olive oil and balsamic vinaigrette in bowl (whisk)
· Slice eggplant
· Place slices on cookie sheet, and brush with oil-balsamic vinaigrette mixture
· Broil for 3 minutes
· Flip eggplant, brush with oil-vinaigrette mixture and broil for another 3 minutes
· Slice tomatoes and place on cookie sheet
· Brush tomatoes with oil-vinaigrette and broil for 2-3 minutes
· Stack: eggplant, tomato, mozzarella cheese, basil leaves, eggplant
· Broil stacks for 2 minutes (to melt cheese)
